Nour El-Din Khalil is a PhD candidate in Food Science at the American University in Cairo, supervised by Prof. Amr Farouk. His thesis applies ultrasound and pulsed electric field pretreatment to optimise polyphenol and dietary fibre extraction from date palm fruit by-products, evaluating bioactivity, scalability and cost-efficiency for functional ingredient applications in bakery and beverage manufacturing. Six publications in Food Chemistry and Ultrasonics Sonochemistry document his extraction yield and antioxidant data. Nour collaborated with the Cairo-based functional ingredient company Safi-G and presented at IFT annual meetings. He has received an R&D scientist offer from a regional food innovation company expanding into Gulf markets. His extraction process has reduced ingredient waste at two Egyptian date processing facilities by 40 percent.
